Chia seeds, a flowering member of the mint family, are obtained from the salvia hispanica plant, originally grown and harvested by Mayans in Central and South America thousands of years ago. Although chia seeds are mottle-coloured in brown, gray, black and white, they are categorised into two basic colours as black or white. They are small and oval shaped, a little larger than a sesame seed, and being a hydrophilic seed, when soaked in liquid, absorb about 12 times their weight. Once soaked, they develop a mucilaginous gel-like coating which gives these seeds a unique texture. The gel thus produced can then be consumed on its own or be used in blended drinks such as smoothies, shakes or juices. It can also be used as a thickener for dippings, sauces and also be used in jams, jellies and other fruit preserves.

Featuring a mild and nutty taste, chia seeds which are rich in omega-3 fatty acids are considered to be beneficial to health in many ways. To name a few, they are being often used as a weight loss aid, natural blood sugar regulator, and as an energy booster. Also considered to be containing a higher concentration of linoleic fatty acid and alpha-linolenic than any other crop, it is also believed that chia seeds contain more fibre and protein than wheat, barley, oats, corn or rice but has the advantage of not containing any gluten. Chia seeds are also rich in iron, phosphorus, calcium, magnesium, zinc, potassium and copper. It yields 25-30% extractable oil, including α-linolenic acid and is traditionally consumed in Mexico, and the south western United States.

Apart from its nutritional value, chia seeds’ high fibre content is known to make the human digestive system more efficient by scrubbing the walls and linings of the intestines, increasing nutrient absorption. Furthermore, the gel of the chia seed allows the body to store more water, thereby, makingit the ideal food for those who are always on the go.

Although they are referred to as black chia seeds, they are never completely black as they come in colours that range from brown to gray. Black chia seeds are extracted from plants that bear purple flowers and are used in a variety of recipes as well as ground into flour and used for baking.
